What are microgreens?

Now you may be asking what is a microgreen? When I first heard of microgreens I was shocked to find out the health benefits. Now eating microgreens and learning about them are two world of difference. Microgreens are new and upcoming for the past couple of years (highly profitable, ofcourse duh). They are young seedlings of edible greens that have a wide variety of delicious taste and texture profiles. Microgreens can come in 50 to 60 different flavors, have awesome flavors and taste wonderful.

While maintaining the intense and strong flavors from microgreens than larger vegetables and herbs, they can hold 4 to 6 times more nutrients than the mature plants. Research shows red cabbage microgreens had 40 times more vitamin E and six times more vitamin C, while cilantro microgreens had three times more beta-carotene (Journal of Agricultural and Food Chemistry)

Most of the most popular seeds and microgreens you will see in the market are as follows:

  • Sunflower - sweet and yummy

  • Mustard greens - strong spicy and tangy

  • Kale - Sweet and crunchy

  • Arugula - bitter and raunchy

  • Brocolli - little bitter and green

  • Spinach - strong and earthy

Eatclusive will focus on a subset of these choices and pivot to the customer demands, and favor one in a given community given their choices. We may even research the nutrient solutions fed to these microgreens to ensure you have the tastiest and most flavorful microgreens!
